The meat dish is ideal served with Tzatziki:
INGREDIENTS

  • 1 large cucumber
  • 1-2 garlic cloves finely chopped
  • 1-2 tablespoons of olive oil
  • 1 tablespoon of white wine vinegar
  • 2 tablespoons chopped fresh mint
  • Salt & pepper
  • 500g Greek yoghurt
  • Olive oil to drizzle

INSTRUCTIONS

Chill for 1 – 2hrs

Peel the cucumber and trim the ends. Cut in half lengthways and scoop out the watery centre using a teaspoon. Chop the cucumber into small squares or you can grate it. Drain in a colander for approximately 10 mins to eradicate any excess water.

Mix the cucumber with the garlic, 1 or 2 tablespoons of olive oil, the wine vinegar, 2 tablespoons of mint and then season. Empty the yogurt into the mixture and blend well. Spoon into a serving dish and chill for 1 or 2 hours.

Finally, drizzle the remaining olive oil on top of the garnish, and decorate with the remaining mint.
